This was a bit more labor intensive; totally worth it! Scallops over pasta-YES please! The sauce develops easily and is magic on the tastebuds. I will be making this one several times a year.

This dish takes around 3.5 hours (not a ton of downtime either). The recipe calls for lamb; ground pork can be substitued without a whole lot of difference.

It starts with a base of Tomato Paste and Coconut Milk-from there the layers of spice intensify! Cod was an easy choice for a different kind of curry. The Cod will cook quickly, so watch out for overcooking as it will start to breakdown. Even if it does, it's still going to have you coming back for more! Delicious.

Light and delicious. I seared the Cod in Toasted Sesame Oil and the flavor was great. The Pea Purée is light and I probably would have eaten my Peas growing up if they were served like this!

The dish is light and flavorful! I love the richness cream brings to the dish. This time I added Saffron and it delivered! Make sure you drop the the shrimp last minute as not to overcook! The key for these grits; the BEST grits you've ever had, is to KEEP stirring. Deicious!
