The recipe calls for a rotisserie chicken, I used chicken thighs; the authentic way would be to cook a whole chicken and break it down. Let me just say, YES!!~ This one was cozy just like the website says. It's warm, inviting and I just can't get enough. I took one of the comments on the website and used Pilsbury dough for my dumplings and it totally works (and saved a lot of time and effort). Freezes great too! This will not disappoint!!

Sometimes you just look in the fridge and build it as you go...The biggest take away was adding radish to my soup! It added a potato like goodness to the finish with earthy flavors. The sweetness of the coconut with the spice of red pepper make this a go to any night of the week.
